WTF Zucchini Muffins

The reason I decided to name this post “WTF Zucchini Muffins” is because once you see the ingredients in this recipe you are going to think I way over did it. But whatever they taste delicious and I wanted everything all at once this morning.


To simplify the name of what these muffins we will just call them semi whole wheat chocolate zucchini muffins. My goal this morning was to create a chocolaty muffin with no butter, oil, or eggs. I was worried that they would come out a little dry but they were pretty darn moist (this may have to do with the fact that I ever so slightly under baked them).


(Makes a little more than a dozen muffins)

  •  1 cup Whole Wheat Pancake Mix
  • 1 cup white flour
  • 1/3 cup of light brown sugar
  • 2 tsp of baking powder
  • 1 tsp of cinnamon
  • 1/2 cup of grated organic carrot
  • 1 1/2 cup of grated organic zucchini
  • 1 tsp of vanilla extract
  •  a little more than 1/3 cup of almond milk
  • 1/4 cup of Ghirardelli coco powder
  • 1/4 cup Ghirardelli chocolate chips
  • 1/4 cup of roasted walnuts
  • 1/2 cup of apple sauce
  • 1 and 1/2 ripe mashed bananas


  1. Preheat oven to 350 F
  2. In one bowl sift together dry ingredients
  3. In another bowl combine wet ingredients (including apple sauce and bananas)
  4. Combine wet into dry
  5. Add chocolate chips
  6. Distribute into greased muffin tins, top each with a few nuts
  7. Bake for about 18 mins
  8. Devour while choco chips are all melty
