Pear & Goat Cheese Galette with a Rosemary Crust

Ok, so I had these almost about to go bad local pears.

They needed to be used/I wanted to bake something (mainly so I could take photos of that something) without out consuming the whole thing right out of the oven.

So I came up with this genius plan to make this pear & goat cheese galette. It’s brilliant because I don’t like goat cheese hence I won’t eat the mass quantity of it (just a nibble to make sure it tastes ok)


  For the Crust:

I used this recipe and I thought it came out perfectly and not to rosemary-ie

For the Filling:

  • 2 cups of pears (peeled & cored)
  • 3 to 4 oz of goat cheese
  • 2 tablespoons of flour
  •  3 tablespoons of sugar
  • 1 tablespoon of lemon juice
  • 2 tablespoons of cinnamon
  • a handful of almonds (chopped)
  • a few tablespoons of milk (for brushing galette with before baking)
  • a few tablespoons of honey (to drizzle on top of galette after baking)

  1. Preheat oven to 375F
  2. Let goat cheese soften up a bit meanwhile combine the pears with the flour, sugar, lemon juice, and cinnamon
  3. Roll out dough and transfer to a cookie sheet lined with parchment paper
  4. Smear on goat cheese, leave space at the edges
  5. Dump pears in the center and spread slightly
  6. Fold over edges and brush milk over the entire galette
  7. Bake for approx 35 to 45 mins
  8. Let cool slightly before drizzling with as much honey as you desire (for me a solid 3 to 4 tablespoons cause I love me some honey)
